repost: still confused about fat %

I’ve bought cheese that says 33% fat in dry matter. The nutrients are: 9g fat, 4g carbohydrates and 20g protein. Wouldn’t this be 9/33 ≈ 27% fat?

This is driving me insane.

Answer

It may be 33% of Calories are from fat, not 33% weight. Different macros have different density of Calories.

Edit: although by my calculation that would get you nearly 46% calories from fat using the weights you gave.

Answer

Uh. Fats are 9 kcal a gram.

So it’s kind of like 18+4+20 = 44. Then 18/44. Which is like 41 percent, calorically.

That’s some really high protein cheese. I prefer my cheeses about equal in fat and protein, and low in carbs. I’m guessing there’s added sugars and added protein or “low fat”. What’s the cheese?
