As a general rule of thumb, which are more nutritious? I’ve tried light googling and found nothing particularly conclusive one way or another. Thanks in advance
There are some great root vegetables but I would stay away from potatoes for those with a leaky gut because it is not broken down fully in the small intestine and left as food for bad bacteria in the gut. Everyone absorbs nutrients differently so it is impossible to compare which is more nutritious. For example some people react poorly to oxalates in leafy greens causing them more harm than good. What is the most nutritious way to eat despite all that is to eat those vegetables fresh, locally, and seasonally.
