Other than nuts and popcorn. Are there any shelf stable crackers, chips, etc that you know of that aren’t super processed?
My little granddaughter recently shared some freeze dried apples with me and they were surprisingly crunchy and delicious. Not sure what brand , but pretty confident you could buy these snack - sized packets in a health food store.
Nuts, dates (they last a long while), dried fruits (will be more sugar though), peanut butter or hummus dip with anything (hummus may not last unless refrigerated though), toasted moong beans/chickpeas - a few I enjoy

Honestly, rather than seek out specific product/brand recommendations, it’s probably better to go to your local snack aisle and start reading packages. Look out for added sugar and err toward packages with more recognizable ingredients - preservatives and flavour enhancers are fine, but a long list of ingredients you don’t recognize (that aren’t like, added vitamins or common preservatives like citric acid) indicates a highly processed food that you want to eat in moderation. Though there’s a lot of variation on what “processed” can actually mean, ya know?
For example, I’d put pickles in the “minimally processed” category - brined/fermented is a process, but it’s a far cry from eating a pop tart or something. Pickled beets, peppers, olives, kraut, kimchi, mushrooms, etc are all great snacks or addition to a meal.
Shit in cans isn’t always bad either. I use canned hummus and refried beans as dip, and it’s a useful thing to keep in the pantry. Those little canned tuna snacks or flaked ham might also do it for you. Slap that shit on some whole grain crackers (I like Wasa Crispbread, but really just scope out your cracker aisle) or organic corn chips, and you’re done.
There are also a lot of fun trailmix-adjacent foods. I love dried pea snacks and roasted chickpeas, and there’s a million kinds of dried/freeze dried fruit. Maybe fruit leather, if you prefer a more uniform texture. If you eat meat, a high quality beef jerky is good. This has been a lot. I hope you find your snacks!!

Dried edamame is dope. That’s a recent find for me. Also very inexpensive.
RX bars are the healthiest as far as bars go, in my opinion.
I also notice you don’t mention dried fruit. That’s a good option.
Jerky.
Baking chocolate.
Kale chips are good. The brand Brad’s (US) makes some more crackery like things too. I also like Mary’s crackers. You may like flackers, but I wasn’t a huge fan (flax seed).
I sometimes see mushroom jerky or chips. The jerky is surprisingly good.
Maybe not what you’re looking for, but canned stuff. Canned fish, beets, etc. They can make good snacks.
Obviously the branded stuff can get pretty pricy, but definitely nice indulgences or ofc great all the time if money is no object! And you can always make your own kale chips, jerky.
They sell freeze dried cheese as bagged snacks.
If you can find baked pork rinds, those are good.
Of course, make sure the branded stuff isn’t loaded with sugar and such, too.
I love roasted edamame (“soynuts”), roasted fava beans (also called roasted broad beans), roasted chickpeas (Biena is a great brand but there are cheaper options), roasted choclo corn (“Cornnuts” or Trader Joe’s Peruvian Corn), and wasabi peas.
