Coconut oil has the most SFA. Humans, however, mostly didn’t have access to coconuts throughout their evolutionary timeline. They ate animal fats instead. Tallow and lard, however, have more PUFA. So, which is better?
What we had access to during our evolution tells us very little about what’s healthy. Back when I bought into the whole paleo thing, I read Food and Western Disease, and Lindberg made a huge deal of how the Trobriand Islanders ate coconuts and seemed to do fine (although you would expect any population to seem to do “fine” when the weaker 50% dies every generation before reproductive age, as is the case with pre-industrial societies)
