I ordered a book on sauces a few years ago. Huge thick book, couple inches thick and under $50. secondhand; liked it so much I ordered two more as gifts. This was a 3rd edition; I thought hey, the 4th edition must be even better, so that was the next purchase. I get into the book and it’s loaded with emulsifiers for restaurant and hotel use. Didn’t open that book again; the 3rd edition with all the old-world sauce making tips is the one to get.

I am becoming skeptical of the food and drug administration as I’ve been reading books like “The Radium Girls”, and “Mad in America”. Both of these books show prime examples of when the government ignored harmful effects for the sake of profit and reputation. Please be careful of anything you ingest, but to minimize the conspiracies, the government has since past numerous laws preventing a lot of the poisoning that was going on. Seeing this just reminded me of those books.
