Vegetable juice

What are the pros/cons of drinking vegetable juice on a regular basis? Not as a meal replacement or instead of eating whole vegetables, in addition to. Does using the pulp in muffins or something compensate for the lost fiber?

Vegetable juice definitely has its uses. You can get a much greater uptake of certain nutrients which would otherwise be physically impossible if you tried eating 20 carrots or tons of greens with all the fiber intact. It’s great to replenish the body at times when you don’t want to burden yourself with calories and large meals.

The cons are that it is quickly oxidized and should be consumed immediately. The loss of fiber is another thing, but fiber has no nutrients and simply feeds your gut bacteria.

It can hardly be bad. If you’re not adding sugar to it, it’s certainly better than any other juice people drink. I get the vegetable juice from Trader Joes and it’s super low calorie and I feel pretty good after drinking. It also stimulates my digestive system. I think it’s the best drink possible outside water.
