I think a small minority of people have flare ups and other allergic reactions from certain vegetables and cut them out entirely. I follow a lady on Facebook who gets bad acne and rashes whenever she eats vegetables so she eats a strict keto/carnivore diet and it’s worked out well for her. The others who think vegetables are the devil are carnivore diet enthusiasts who either are misinformed or simply enjoy having a meat/cheese/dairy-only diet. Unless you have similar issues, there is no real “legitimate” reason to cut them out

There are plenty of peer reviewed papers that prove eating whole food, low to no oil, and only vegetables comes with a bundle of benefits. Unless you are purposely and violently shoveling nightshade family vegetables into you, you are going to be fine, better even.

SOME vegetables exist on scale of toxicity. Most are amazing sources of nutrients. Another thing to keep in mind is that many of the “vegetables” that we eat are actually fruits. Fruits are not toxic at all because they rely on other animals (including us) eating them in order to reproduce.

Oxalates.. and the premise behind the fact 75% of plants in this world can kill your or make you very sick.. also the bioavailability of nutrients in vegetables is low compared to more nutrient dense sources like red meat, fish, etc.
