Weight stall for 2 weeks+ after extended fast?

Finished a 30 day fast and ended at roughly 170lbs. It’s been around 2 weeks since then and I’ve been in keto at a calorie deficit of roughly 1000cals a day but I’m still hovering around the same weight 171-172. For some context, I eat around 1200 cals and burn roughly 700cals on a treadmill (before people come for me, I’ve talked to my doctor about it and feel absolutely terrific)

I know the common answer is that I’m prob overcounting calories but I weigh my food, including sauces, oils and other ingredients. I also eat from a very small selection of items and don’t eat out often so I’m pretty confident that I’m not overestimating consumption. Any idea what is going on here?

My guess is that since I didn’t really regain any weight after a 30 day fast, I’ve just been slowly accumulating water and food inside my body that is making up for the actual weight lost? Or is there something I’m missing, I know thermodynamically I have to be losing fat, but not seeing the progress is kinda a bummer.

You are probably still losing fat, but gaining water weight or muscle. I would expect after another week or two you will go back down. If that doesn’t work, maybe try OMAD or increasing your deficit. Calorie measurements are horribly inaccurate so it may be that, but probably not THAT much.
