Really? You’re too busy to take 20 minutes to cook vegetables? That doesn’t sound healthy.

You can eat a lot of vegetables raw, of course, but humans evolved to eat largely cooked foods. Many of the nutrients in a lot of vegetables aren’t as bio-available raw. While cooking them reduces their vitamin content to some degree, depending on the way they’re cooked, it also breaks down fiber and cell walls, making those nutrients more bioavailable. It also makes things like beta-carotene and lutein more available.

While cooking those raw tomatoes you eat reduces their vitamin C by 30%, it more than doubles the lycopene content within 30 mins of cooking and the total antioxidant capacity of the tomatoes increases by 60%.

If you’re going to eat them raw, at least take the time to chew them well, because you’re going to need to put more effort into chewing the vegetables to get the nutrients from them.
