IE- stuff like throwing in a few potatoes, carrots, onions, spices and chicken, etc.
Zucchini, squash, beans, garbanzo beans, potatoes, ground turkey, corn, a lil butter. I throw all this and add some onion and tomato to it in the slow cooker and it comes out delicious every time. My neighbors love it and so do my kids friends and their parents whenever they show up on “soup” night. Highly nutritious and very healthy.
Trader Joe’s has an awesome holiday hash veggie blend that has sweet potato, butternut squash, celery, onion, and some fragrant herbs. I like to sauté that in some olive oil for around 7 minutes, then add some bone broth (for protein and collagen) and 1 cup of lentils. I boil that then simmer until the lentils are soft, then I use either an immersion blender or regular blender and it’s soooo good!
