I’m trying to find a good baked oats recipe that is vegan, oil free, and nut butter free but looks like that is all there is out there. Does anyone have some ideas on what I could use? Mashed banana is already in these recipes usually too. :/
Even before looking at your post history I could tell why you’re asking. I was unfortunately in your position for a very long time so I understand the frustration, and I hope you’re able to comfortably diversify your diet later on.
In any case, to replace the egg you can use a mix of baking soda and vinegar (1tsp of baking soda mixed with 1tbsp of vinegar though this only works if your recipe calls for one egg), a flax/chia egg, aquafaba (liquid from a can of chickpeas), apple/pumpkin purée, arrowroot, or silken tofu. Applesauce, pumpkin purée can replace the oil. Baking really is a science, so you’ll just have to experiment and figure out what you like the most.
