I once read corn starch spikes blood sugar levels higher than sugar? Is it true? And so yea that got me curious which food item spikes the most Like who’s on the top?
Levels is an awesome company that is heavily researching metabolic health and blood sugar. They have pointed out that each of us can have a different metabolic response to foods. For example, one person may have a large glucose spike with a banana, but not with rice and vice versa.

Starches have the highest response because they are mostly glucose. Sucrose has less because it is half fructose.
Note that there are other issues with fructose that arguably make it worse than glucose.
