What parts of vegetables can I NOT eat?

I’m planning on just washing and throwing everything in a food processor until it gets down to about diced onion size for consumption. I’m trying to eliminate wasted time and effort chopping up everything, also, less food in the trash.

So what do I NEED to chop off or avoid here?

There’s pretty much nothing you can’t eat with veggies, but carrot tops probably won’t taste too delicious so I’d cut them off. Also if you ever do rhubarb-the leaves are poisonous so stalks only.

There’s something called the dirty dozen (you can Google the list) and those are veggies that really absorb pesticides. I’d recommend making sure you buy those organic when available.

Good for you for eating more veggies and keeping it easy for yourself too! 🙌🥦🥬🥒🫑🥑🌶🍅

Everything except avocado peels.

Nope - apparently they’re healthy!
