what resource do nutrionist use to know the amount of micros/macros for a diet?

I’d like to read about the calculated macro/micros necesary to follow a “fatty liver disease diet” (which from what I understood is a version of a ketogenic diet?)

in a hospital library i once (20ya) found a terrific huge nutrition handbook with almost a hundred values for every food item. unfortunately, never saw it again, would appreciate a review of current books & websites
