Vitamin B12 gets stored in the liver, but the other B vitamins, not very much. Vitamin C also gets depleted quickly, as it’s water soluble. Vitamin K is made by gut bacteria, from food.

Afaik these are the vitamins that you should pay attention to, the rest (A D E B12) have more or less stored.
