As people have said before I think Japanese food as well as Korean food tends to be low fat or at least natural fats that come from fish. In addition, they also have a focus on fermented foods which is really good for your system

People are saying traditional Japanese food but keep in mind - this does not refer to Karaage, Ramen, Tempura, etc that might come to mind when you think of Japanese food. We’re talking about Sashimi, Onigiri, traditional Japanese Sushi, Soba, Sukiyaki, etc.

Its not a ‘culture’ per se, but you may have some success looking into what contest-prep bodybuilders, fitness models, and other physique sport members eat, which tends to run very low fat in general. I’d say Mediterranean diet. South east asian (Indonesian, Thailand, etc) tend to lean more heavily towards spices and minimal use of oil but again, that would be depending on the meal choices as well. Most Korean & Japanese foods are deep fried (like katsu) or oil based (like jjajangmyeon). But if you’re looking for something less fatty, look up bibimbap, sushi (you might wanna watch the mayo on the sushi rolls), onigiri, etc. I’d say for most parts of cuisines, there would be meals with high and low amount of fats, depending on your choice. But if you really want cuisine/culture with less fatty foods in general, check out Mediterranean bc they tend to consume more unsaturated fats instead of saturated fats and generally high in protein

Like some others have said, Japan probably has the most low fat diet, also there is a little known tonic that most of the island of Okinawa use to increase their metabolism and improve their digestion.
