Why are toasts good but bread bad? What changes when toasting?

Maybe this is common knowledge, but google didn’t lead me to any reliable source, so here I am.

The title says it all. Bread is almost always classified as a food to avoid, but toasts are usually suggested as a part of a good breakfast.

I want to understand why. What does it change when you toast bread that transforms it from an ingredient for unfitness to part of a balanced diet? Does it have to do with the starch? Also, does it affect the gluten content in the bread slice/toast?

Though the fat in the bread will not be lowered significantly, it will definitely make a difference if you eat bread every day.

Bread is healthy man. Just opt for whole grain. It’s actually the type of food you should be eating in the largest proportion of your daily diet. Whole grains are like a quarter of what you want to eat everyday, whole grain bread being a great and healthy option.

If anything I would argue toast could be potentially worse for you due acrylamide and other carcinogens. More if it is super dark or burnt. But even regular toast would have more of these undesirable compounds compared to bread. When growing up I used to love to burn everything I ate. Now I always try avoid overcooking anything, especially with dry heat.
