Why is fasting hard on some days and easy on others?

I fast for 20 hours everyday (OMAD) most of the times it’s easy but there are some days where I get hungrier way sooner than usual. Does anyone know why this happens and if it can be stopped?

Hi! I noticed at the beginning of my fasting journey that the ease of my fasts heavily depended on what I ate. The more starch, carbs I had- the harder the fasts. Sometimes I could do 20 hours no problem and other days I couldn’t barely make 12. The second I eliminated carbohydrates, including fruits, healthy grains, and oats, I was able to maintain fasts easily and steadily. I ended up doing low carb/high fat and was the thinnest I’ve ever been without the hunger.

Also, artificial sweeteners in diet cokes/coke zeros tend to make my next day fasts miserable.
