Also depends on what supplements and who told her to take them. Supplements are not regulated by the FDA so the integrity of what they contain and their effectiveness are not guaranteed. It can also be a predatory market in the weight loss community but it can also be completely harmless. Skipping breakfast is perfectly fine, just have to eat a balanced diet the rest of the day.
Assuming she’s going to take her vitamins in the morning, the butter helps absorb the fat soluble ones, which is pretty useful if she doesn’t want to move the vitamins to be with lunch of dinner.
Butter also provides a source of calories to provide energy for the day, and although it’s a lot of calories, one spoonful isn’t that much.
… That’s basically it. It’d be a little healthier for her to switch to flaxseed or olive oil maybe (they have healthier fat profiles and more antioxidants), but probably not enormously so… And it’s neither the best or worst way to start the morning or to get her vitamins in.
