So I can actually relate a great deal, I am 12 days sober from weed and alcohol as well. I had been cutting back on the alcohol for the last 6 months trying to get clean again. I was sober 2 years, then drank and smoked daily for 3 years.
For some people (depending how much you were drinking) it can be incredibly hard to put down alcohol and sugar together. I know many sober people who had ice cream daily for the first 30-90 days of sobriety.
This is not my first jaunt of sobriety and the fasting is actually helping distract me from cravings for alcohol or drugs this time. This is not a typical response.
I just want to put it out there, if your main goal is to put the drugs and alcohol down you should feed your body what it craves to make it just a little bit easier. Alcohol is sugary and so feeding your body sugar is a common tool to overcoming the physical cravings that are so hard early on.
Only you know your body though, just be gentle with yourself. Progress not perfection.

After about 2 days your body stops consuming glycogen from your muscles and switches into ketosis, e.g. starts using your body fat as the main source of nutrients. Also first two days are the hardest physically and mentally.
That being said, your plan seems to be difficult to follow and less effective- you’ll likely loose more muscle than fat
I would recommend just going water only for 3-5 days and exit, refeed slowly and start eating clean ang healthy, then do another 5-7 day fast after 2-3 months, and keep adding 1-2 days untill you can comfortably fast for 14 days.
