Would home-made vegetable broth have much minerals or vitamins?

The ingredients would be broccoli, root vegetable, sugar snap peas, and dark leafy greens. It would be brought to a boil and then simmered for about 20-30 minutes with water to cover it. I know it wouldn’t be the same as eating the whole vegetable, but I’m wondering if it has any nutrients at all.

Answer

A lot of vitamins start getting broken down by the cooking process, but it should still have plenty of minerals and some other macronutrients and phytonutrients depending on what was included. It’s better to eat whole veggies, but it still has some nutritional value.
