It can. Some people’s insulin levels don’t respond to artifical or fruit based zero calorie sweetners. Most people’s insulin does spike. Your body associates sweet with calorie dense food so it surges insulin in anticipation of accommodating all those anticipated calories.
If you are fasting for weightloss the insulin spikes are counter productive. Fasting for weightloss is all about keeping glucose low which results in lower insulin levels.
