Sushi can be very low sodium as well as long as you don’t get the Americanized rolls and go heavy on the soy sauce.
Also what’s the worry with sodium? If you are healthy in other aspects of your life sodium isnt an issue. Hell the top 3 oldest living countries in the world Hong Kong, Japan, Macao eat 2-3 times more sodium on average than Americans.
It’s not the amount of sodium Americans are putting on their food, it’s the portions.
