Question about cooking veggies. Roasting versus frying.

I’m confused. We’re told not fry on high heat in oil as it is not healthy, yet we are told to roast veggies in air fryer/oven at high heat with oil. How is frying any worse than roasting? Also using a wok is supposedly healthy, but again, high heat and oil use. Can someone please clear this up for me?

The amount of oil it takes to roast a head of cauliflower to beautifully crisp in the oven? A tablespoon or two! The amount it takes to fry it? A cup or two. And the fried food is usually battered or coated too. And it has a chance to absorb so much more oil.
