If I understand correctly, it depends on what you’re looking to get out of bananas. I know that green, less ripe bananas are higher in dietary fiber, and can have a prebiotic effect, but more yellow bananas are higher in potassium/vitamin B6.

So it’s just more about what you’re looking to get out of it!

There is one variety of banana called Canary island banana which has remarkable amount of fibre, vit B6, potassium and vit c.
