Calorie Intake Question

Hello everyone!(30 Female, SW:233 CW:221 GW:150)I am pretty new to intermittent fasting. I have been doing 16:8 it for a little under a month and I have a quick question. So I find it really hard to consume enough calories during my break fast. On average I am eating 1000 calories per day. I know I should be consuming at least 1600 calories per day but I just can’t eat that much. I am also a vegetarian for 5 out of 7 days (I dont like most meat). I eat a salad and I am full for the rest of the day. Does anyone have any tips for consuming more calories? Or any food recommendations that will help bridge this gap? I am also trying to rebuild muscle from an injury and this is really hindering my progress.

Tree nuts are high in fat and calories and won’t fill you up like eating an avocado would.

Busing muscle is going to require protein. If you cut out meat you are going to have to hunt for some high protein plants. I haven’t researched shrooms mut I think they have some proteins
