“Water soluble” doesn’t mean it’s impossible to store, it just means that it doesn’t need a binding protein to circulate through the blood. Every cell has water-soluble vitamins stored in them, including fat cells. When fat cells release their contents during fasted states they also release their nutrients.
you really need to do some basic research (even googling will help) on the storage capacity of each vitamin and mineral. your distinction of fat soluble vs water soluble seems intuitive but is broscience as you’ll easily discover!
