I struggle to keep to the eating window (mostly because I am married with 3 young children, things can be chaotic)
I counter this but fasting until later the following day, so the fasting window is always the same length, but the feeding window might vary.
Does this matter?
The simple answer is: no. What probably matters more is what you’re eating in your eating window.
The longer answer is: somewhat. Most likely a shorter eating window will mean quicker progress (again, dependent on your macros), but in the long run you should do what you can comfortably stick to and ESPECIALLY what fits your lifestyle. If you follow this flexible schedule but still fast on a regular basis, there would be negligible differences after any amount of time.
