Shredded coconut goes on a long line in factories includes drying, soaking, and pasteurization. Does all of that make it losing nutrients? Like minerals, and fats
Most manufacturing processes lose nutrients along the way usually to aid things being shelf stable and longer lasting although some additives can throw off the balance as well like excess added sugars etc. There is a lot of data available but mainly on raw coconut from what I can see from a quick internet search, although this site seems to have reasonable in depth nutrient listing for various coconut products as well as other things.
