Just eating the same thing all the time can psychologically put you off it.

Your body’s nutritional requirements can also vary during different periods of your life, even seasonally, and more so when there’s a deficiency (or excess). Your taste receptor cells are highly attuned to that and through complex feedback loops with the gut, it can trigger the necessary sensations.

In other cases, the taste buds can be tricked by certain chemicals/additives/preservatives - this is why junk food can be so addicting. But abstaining from it will reset the taste cravings and no longer make those things seem desirable.
