Does anyone know how much of a difference not eating the peel of vegetables makes?

I know that the peel is nutritious and for that reason I never peel potatoes and I try not to always peel carrots. But I wonder how much of a difference it actually makes? Does anyone know something more specific about this?

Often the skin is a great source of insoluble fibre whereas the inner contents have more soluble fibre. Insoluble fibre is beneficial for healthy bowel movements as it pushes things through your digestive system. Soluble fibre is great for things like diarrhoea but insoluable fibre can’t absorb water like soluable fibre can, so it’s better for constipation and regulating your bowel movements. Yeah, that’s true, but you should probably peel the potatoes anyway.

Apart from being one of the vegetables blasted with pesticides (more so than others), the Glycoalkaloids / Solanine in the skin shouldn’t really be consumed either.
