If you make vegetable soup, how much nutritional value does it still have in terms of vitamins?

im wondering about this one thing. Lets say you buy various vegetables like carrots, onions, garlic, leek, zucchini etc. You wash it, you cook it for 15min in the pressure cooker with just water and nothing else. How much of the vitamins does the soup have compared if you just ate all of the above raw? Does it count as healthy? Thats two questions.

If it loses any nutrients via cooking, they will be present in the broth. In this situation, no nutrients lost.

If you took them out after cooking and just ate them without the liquid, there may be lower levels of nutrients, but generally the changes would be very minimal. And if your worried about it, drink the left over gross water after.
