Question about blood sugar/insulin sensitivity being better over time.

After getting covid early last year I suddenly had pre-diabetes. I switched to healthy eating and later added IF and keto. I’ve lost 55 pounds. Currently doing ADF 42:6.
Thing is, when I discovered I had pre-diabetes, my morning fasting blood sugars were 105-115. I’ve adopted a pretty strict paleo- keto eating plan. For the month of December my average morning sugars were 80.
Dec 27th I had bread for the first time in 90 days (I made homemade Bara Brith with my son.) The next morning my blood sugars were 138 - in the diabetic range. 😳😳😳
WTHeck? I thought after losing 55 # and eating healthy for so long … I’d have better insulin sensitivity.
What have others experienced in this arena? Did your insulin sensitivity improve over time? If so, how long did it take?
I agree with not putting too much into your morning BGL after eating that bread, dawn effect can vary widely from person to person. If you want to see what’s actually happening when you eat the bread, check your glucose just before eating then every 30 minutes after eating until you’re back around your starting point. The more insulin resistant you are, the longer it will take. If you’re diabetic it can take hours while if you’re really insulin sensitive it may go so fast you miss it in that first 30 minute wait. If it’s still elevated after 2 hours you’re still diabetic just controlling with diet.

This is a normal and expected response if you had been in ketosis for a long time. If you were out of ketosis for a couple weeks, your body would figure it out and likely you would see a normal AM blood sugar.
