I’m very curious for those who want to eat more veggies here :)
Mine isn’t very sneaky since I prefer veggies, but I make wraps with veggies I used my food processor to chop or shred. I usually add hummus or some other beans for my protein. Super easy if you process enough for several days at a time. I use a low calorie dressing or sauce, anything under 60 calories for a 2 tablespoons serving works. It’s been my summer go to.
Veggies and dip. In stews (zucchini, carrots, peas), stuffed vegetables (delicious arabic dish called mahshi where you stuff your vegetable of choice with rice - popular choices are marrow, eggplant and vine leaves). Mixed in smoothies. Looking up new recipes for interesting salads.
I don’t really sneak veggies, roasted veggies are a treat all their own. I have at LEAST a serving of roasted veggies per meal. I’ve also just integrated them into meals I didn’t have it before. I will pan sear some veggies at lunch, add something to my eggs. I also really started to hate the whole dessert for breakfast thing, so I replaced my Sunday morning waffle habit with waffled zucchini fritters.
