Xanthan gum?????

What is this?? I see it in a lot of stuff. From what i know it’s just a preservative. But i could be totally wrong. What is xanthan gum?! Is it safe ?

Keto friendly recipes call for xanthum gum as a thickener. My favorite use for it is for thickening soups without adding carbs. I’m pretty sure it’s added into gluten free flour mixtures. A little goes a long way. The winco in my area sells it in the bulk section.

I’m gluten-free, so I use gluten-free flours. It’s something chefs, cooks add to bring a better consistency to gluten-free baking like pizza dough, pie crusts, and a number of foods to give us GF beings more choices. I have not researched it for fear I will lose more food . Shame on me?
