Does cooking supplements reduce the nutritional value?

I want to turn my meal replacement powder into a “healthy” base for muffins that will allow me to easily calculate the calories and nutritional value. However, I am not sure if the nutritional content will remain the same after cooking.

Namely, I want to ensure the protein and vitamins and minerals remain the same after cooking at about 350 F for 30 minutes.

The nutritional content of interest looks to be derived from whey protein and synthetic vitamins.

For reference, I will link the ingredients in the comments.

Answer

My professor said this undergrad— it is better to have cooked vegetables if that is what you will take in. However , yes in the cooking process micronutrients can be lost.

One way to ensure you keep your micronutrients is by reserving the cooking liquid and utilizing somewhere else in your meal.

Answer

I think cooking can reduce the nutritional value of your supplement. Some water-soluble vitamins may reduce to a great extent while cooking. But, the nutritional value of protein may not be changed after cooking. It will be the same with or without cooking.

Answer

Depends on what the supplement is.

Whey might denature, and change the characteristics of how it gets absorbed, but it’ll still provide the same amount of protein and the same BCAAs it’s known for.

Some vitamins are very heat sensitive - B and C, I believe, are good examples. Others are very heat stable, like A.
