What do you think is a good minimal/easy to make good tasting and nutrition filled soup?

Sometimes I enjoy making simple kind of soups like a little chicken, onions, potatoes, etc..

Anyone have some good recipes you like to do?

Root veg soup. One parsnip, one turnip, a couple potatoes, a few carrots, celery and onion. All very inexpensive ingredients. I like to purée mine, and if you use the “broth bag” method in the freezer (basically just toss all your veg scraps in it and make broth when it’s full) then you won’t have to buy permade broth and it’s even cheaper.

Navy bean soup….I’ve started making an Instant pot of beans to have this staple around. I put an onion, bay leaf and garlic cloves in with a little salt so the beans have more flavor. I make a base with onion, Celery and carrots with chicken stock and add the cooked beans once the veg are soft. Chopped kale or spinach is good as is some diced tomato. You can grate some parmesan over. If you like a smoother texture you can hit it with an immersion blender. You can always use canned beans

Broth with veggies over rice or quinoa. You can add leftover cooked chicken or some canned beans for protein. For something creamy look up 4 ingredient potato soup…I like to add air fried chickpeas and chives or scallions for topping.
