Advice for fasting with busy schedule?

I am trying to do 20:4 which is fasting wise definitely feasible for me, but I have trouble to start eating once my fasting window ends bc of my schedule.

So I work from 8am till 5pm, which is when my fasting window ends (5pm-9pm is eating window). The problem here is that I immediately have to leave work to drive 1 hour 15 minutes to get my child from daycare, then another 20 minutes drive home, when I need to feed her, bathe her and prep her for bed, by which it’s usually already 8pm when I can finally eat myself. So in the end, I always eat OMAD, which is too difficult for me and on difficult days it’ll mean that I buy a bag of crisps right before I leave work which I fully binge on.

I can’t eat during work, bc I constantly see patients. I also can’t eat later than 9 pm, since I get up at 6am every morning for work, so eating later will make me too stuffed for bed.

Does anyone have advice on small, easy to prepare food that I can eat while driving to my daughters daycare? Something that can’t spill and that I can eat with my hands, but it still healthy?

Usually it’s best to break a fast with lighter foods - Maybe you could pack a small tub of fruit- Apple slices, Wedges of Orange, and a Sandwich - Chicken & Lettuce, Ham Cheese Tomato. Some Boiled Eggs as well? That way you can rotate the goodies you put there and substitute different ingredients. And eat with 1 hand! Also, do you like those Up & Go Drinks?
