This is a pretty common response to simple carbs, doesn’t point to any underlying health condition. They are easy to digest so you get a glucose spike and then a crash which will make you sleepy. When you are not eating simple carbs every meal this becomes way more noticeable.

FYI if low carb is working for you awesome but don’t feel like you have to avoid them entirely. Complex carbs are a healthy source of energy and you may find simply eating better carbs (substituting instead of removing things) more sustainable.

Let me ask you this.

Carbs convert to glucose, right?

So if you’re eating carbs in the form of rice, or potatoes, etc., but not in the form of added sugar… what do you think your body is doing with the rice, that it wouldn’t be doing with sugar?

I’m not saying rice is bad, and sugar is good… carbs are perfectly okay… all I’m trying to do here is break things down a little … you had a big meal, Indian curry which tends to be kinda heavy. of course you felt tired

As for the insulin resistance, na that’s not necessarily a symptom of insulin resistance. For one thing, IR is diagnosed with labs. It’s not diagnosed based on feelings, lots of people feel tired after a carby meal.

Edit - also, you don’t ever have to feel guilty about eating food, even if it is a large portion of it. It’s just food.

I think it’s hard to say if it’s normal based on the information you’re providing - plus you’re talking about one time and honestly anxiety/overthinking could have been playing a factor in how your body was feeling.

My body doesn’t like rice, but adding protein, fat and fiber with my rice does not spike my blood sugar - and many people say the same thing. Something like white rice on an empty stomach will most certainly spike anyone’s blood sugar, insulin resistant or not.

I don’t think this alone is enough to tell you if you respond appropriately to rice honestly. Best to just do your best to avoid sugar spikes in general rather than stressing them IMO.
