Never thought I'd be asking this...

I’ve been fasting for about 3 weeks doing 18:6 successfully. The problem I’ve run into is I’m so used to processed and heavily calorie dense meals the size of a small plate., getting enough calories in 6 hours for the day is challenging.
my meals are mostly vegetables now, various beans like kidney beans and eggs. I wanted to eat meat but i want to stay mostly vegetarian.due to the low calorie content of vegetables is there a trick to adding more calories to meals without making it unhealthy or much more expensive? Right now my aim is around 1500 calories but I’m only managing around 1000-1300 on my best days. Eating has all of a sudden become a troubling endeavour.

I’m a bit weird because I dislike large meals, so eating an entire plate full 2-3 times a day is completely out. What tricks and tips do you use in situations where you have a low calorie meal but needs some extra calories in it? Is that even a thing? I have no idea.

There’s lots of nutrient rich healthy foods to explore that could help you round out a meal without needing to load up a plate full of food. Nut butters, dried fruit, whole grain bread, and brown rice just to name a few.
