Powdered Vegetables

If I blend my vegetables, dehydrate and process them into powder,would there be any side effects if it is my source of vegetables consumption daily even if the amount of nutrition suffices?

They will do if it’s not your only source of veggies and fruit. You probably will destroy a lot of the vitamin c during drying. Also some antioxidants will become oxidized. So the veggies will become a tad less healthy. However you will not loose any fibers. And you might even open up cells and get more nutrition from something like lycopene.

I don’t know for sure but I would guess that you don’t get the same effect from things like fiber during digestion. It’s better than no veggies but probably not the most efficient way to get proper nutrition.
