Question: breaking the right way

I do 16:8 every day. 12pm-8pm is my eating window. My question is, if one day I feel I can go longer, can I just fast for an extra hour that day, so do 17 hours (1pm-8pm) or even 18. Then back to my usual of 16 the next day if I’m hungry?

100% if you feel you can longer or if time passes you buy and suddenly you realize its been an extra hour, no sweat, it just means your body has been in its fat burning state a little longer which should equate to better results. The same goes for the reverse as well. If you need to break your fast an hour early, don’t sweat it.
