So typically I take inulin everyday before I go to sleep for my gut. I plan to start a 7 day water fast on Monday - I was wondering if I can take inulin during my fast in evening before I go to sleep - as it’s an insoluble fibre it shouldn’t have an effect on the fast right ?

Depends on the goals of the fast and the form of the inulin since they sometimes come in tablets containing glucose (Fibre Choice specifically). If the goal of the fast is just weight loss then there are no issues with consuming the tablets or glucose-free inulin. If the goal is autophagy then glucose-free inulin should be fine but it would be best to avoid the tablets.
