Is it ok to consume 1-2 coconuts per day? Is there anything that we should be mindful of eating/drinking coconuts?

I don’t believe it’s recommended, coconuts are very fatty, and more then 90% of their fat content is saturated fat. Moreover, they are extremely high in calories. A medium sized coconut can easily be 1500 calories.
