Trail mix - probably the most popular high calorie and healthy snack.
Hard boiled eggs.
Basic chicken or tuna salad with proper mayo.
Cottage cheese on bread with everything bagel seasoning.
Peanut butter and jelly.
These are easy to make ahead. I sub out the flaxseed for an egg because I prefer the texture, and just use cow’s milk. Also very easy to double the recipe. (This website also has my favorite soaked oats recipes.): Peanut Butter Banana Baked Oatmeal
Also, here is the very best granola recipe. I’ve tried a bunch, and this tops them all. Much cheaper than buying if that matters and you can control ingredients and change things up. I always double batches.
Another quick and easy one is thick slicing sweet potatoes and cooking on a large skillet or griddle with oil, seasonings (I like them a little spicy), and foil on top. Just flip halfway through, and they’re done in 7 minutes. Eat with eggs, toast, a salad, avocado, beans by themselves, with chipotle ranch, whatever. So good.
