Blood, yes. Plasma, not recommended. To stop your blood from coagulating while in the machine they add potassium citrate, which makes the likelihood of nasty side effects higher. Look up citrate reaction.
Other than that if you are reasonably healthy it should be fine. Fasting doesn’t turn us into fragile gladiolas.
