Well a 90-day fast is unnecessary and should only be attempted under medical supervision. I mean if you actually hope to finish it.
Will the weight come back? I don’t know; what does your diet and caloric intake looks like?
Rather than an all or nothing mentality you could actually do IF with long periods (24~32 hours) and use the non fasting time to fix your diet, which is what would eventually make you fat again.
90 days fast? This is unnecessary my friend as you are not too overweight and can get to your goal weight easily with safer more livable methods. You really should consider something like Alternate Day Fasting where you are doing 40/8 or 44/4 fasting and not eating every other day, combined with keto refeeds with high protein where you count calories. If you do this, you will go from 230 to 170 much much easier and safer and you will have energy to be alive! If you do ADF in this manner, you will lose 10 pounds per month almost certainly, maybe more. Might take you 5-6 months to get to 170 but you will get there and you will be so happy. Please consider this instead of the 90 day fast. I swear you will still feel the pounds melt off. Think hard on this! If you are determined enough to do a 90 day fast, you can easily do much safer ADF as an alternative. Good luck, my friend!!
I think the issue is fasting is not about solid vs liquid, or low calorie. It is minimal insulin hit. So a liquid fruit smoothie might be worse than solid avocado. Also, you will be more hungry with low than no calorie. And 90 days is extreme long time. Why not 3 days each week?
